Innovations in alternative meat and dairy are reshaping our food system for a more sustainable future. Yet, we also see pitfalls, barriers to adoption, and a high potential for unintended consequences.
American food culture is seemingly defined by dietary trends, for better or worse. Some have woven themselves into the fabric of our daily eating behaviors while others haven’t, for complex and often confounding reasons.
The intent of the 2020 Speakeasy is to thoughtfully shape the path of innovation in alternative proteins in ways that are “culturally sticky” and that help realize the potential of the category as a meaningful solution to some of the food system’s most intractable problems.
